Look to the Horizon

Today I had this nagging sensation the whole day that I was running about two steps behind. Possibly because I slept in, got to work just on time, had breakfast at lunchtime, ate lunch standing at my desk and then decided to throw the towel in on work early just to get out of there.
On the way back to my car as I strolled through the gorgeous midwinter afternoon with it's sharp crystal blue sky I remembered the way out of the stress hole that I was digging myself.
Just breathe.
Just breathe and take a step back and remember to live in the moment you are in, not the one before, not the one that comes next.
Just right here.
There is nothing you can do about what has already passed, the future will come even if you shout stop; all you can control, all you can enjoy is what is in the present. So live there wholly.
Then I looked up at the horizon and saw the most beautiful cloud formation.
Whorls of pure white against a cornflower sky.

Not affected by whatever might be happening in the lives of the people who scurry past buried in their stress who forget to simply breathe, and look to the horizon.
So the next time you are headed straight for the storm of moments passing by too quickly and things going out of your control - take a look at the sky and just breathe.
And sigh and smile.

Just a Little Exciting News

As of tonight Team Chic Chickpea will officially be taking to the road in another race again!
This time I will not by flying solo as the little chickpea will be gracing the paths with her delicate footfalls alongside me in the Brisbane Times 10km race on August 7th.
With a beautiful course that winds around my home town and a more than reasonable start time of 9:30am, this will be a beautiful way to enjoy a wintery Sunday morning and spend some time with my little sister.
Off to sleep now and dream of running...and cake....

Let Them Eat (a little) Cake

Last night I lay in my bed tossing and turning, making origami out of my sheets and doing a rather impressive impersonation of an egg beater. 
The reason for my turmoil - cake.
Layers of sponge; chocolate, vanilla, orange, cardamom, coffee studded with walnuts....
Luscious whippings of butter cream frosting, Italian meringue, whipped cream and jam, cream cheese, citrus glaze....
Endless combinations of flavours and textures danced through my mind; a parade of baked creations each more enticing than the one before.
I didn't need Jung, Freud or Hall to psychoanalyse these nocturnal visions I knew exactly what I needed to do.
Bake.
Get in the kitchen amongst the flour and the butter, sprinkle some sugar, beat some eggs, pour the batter, bake away and let them eat cake!

I was lucky to steal some hours today where the kitchen was my own kingdom and my wooden spoon was my magic wand. My fairy dust - poppy seeds. My magic pumpkins - mandarins.
My creation - mandarin poppy seed mini cakes with mandarin butter cream frosting.


Mandarin Poppy Seed Mini Cakes with Mandarin Butter Cream Frosting
This recipe makes four mini cakes in a 12 x 1 cup capacity pan (like this one). You could use a large capacity muffin pan instead if you prefer.


Ingredients
95 grams self raising flour
30g ground almonds
20g poppy seeds
90g butter
80g caster sugar
40g orange or apricot jam
2 teaspoons finely grated mandarin rind
40 ml mandarin juice
1 egg and 1 egg white

Method

  1. Preheat oven to 180 degrees Celsius and lightly oil four spaces in a 12 x 1 cup capacity pan.
  2. Sift flour into a large bowl and add almonds and poppy seeds and combine.
  3. In a medium saucepan melt together butter, sugar, jam, rind and juice. Stir constantly until smooth.
  4. Add butter mixture to the flour mix and stir with a whisk.
  5. Add egg and egg white and whisk until smooth and combined.
  6. Divide mixture amongst prepared spaces and slide into the oven.
  7. Bake for about 15 - 20 minutes or until a skewer inserted into the middle comes out clean.
  8. Allow to cool in the pan for 5 minute before turning out to cool completely.

Mandarin Butter Cream Frosting

Ingredients
1/2 cup butter softened
2 cups icing sugar
1 teaspoon mandarin rind
3 teaspoons mandarin 

Method
  1. Beat butter and zest with a handheld electric mixer until smooth and glossy
  2. Add icing sugar and juice and beat on medium until pale and fluffy
  3. Refrigerate for about 5 minutes and then spoon into a piping bag.

Putting it all together
Use a serrated edge knife to split cakes in half horizontally once cool.
Pipe about a tablespoon and a half of butter cream into the cut middle of the cake.
Place other half of cake on top and then decorate the top with the remaining butter cream.


There were just enough cakes for my family to enjoy one each. Judging from the silence, punctuated only by the scraping of cake forks on porcelain plates, they taste pretty good.
Smiles of sugary satisfaction are worthy of a sleepless cake dream filled night.


My world today was a mix of different flavours:


Cardamom pistachio sugar and Viennese Christmas sugar purchased in Melbourne.

Delicious sprinkled on:

Oats with raisins, cardamom and a dollop of natural yoghurt.
Snack from my garden:
Garlic chives with avocado on corn thins
A gift for my friends at work:
Vanilla and sea salt cake with vanilla syrup
I wonder where my dreams will take me tonight....

I must take a moment to make a special mention of my friend Matt (also Casey's boyfriend) who is always supportive of baked goods, loves mandarins as much as I do, gives awesome hugs and reads my blog every day. I can't wait to see you and Casey for family dinner some time very soon.

I promise that I have tried to downsize the number of images that I am sharing here, however whenever I travel I want to try and capture the feeling of a moment so that I can remember at a later date. Perhaps it is the thrill of discovery, or the comfort of rounding a corner to a familiar and loved spot that is already full of memories, or maybe just attempting to trap the beauty that can be found when you just stop to actually look where you are rather than just rushing past.

 So there you have some of the highlights of Melbourne. There are more food pictures to come as Mum was in charge of digital caloric capture. I was far too busy enjoying the capture of calories in my mouth. There was not a bad meal, never a dull moment and I feel so lucky to have enjoyed a wonderful holiday with two of my best friends. We have never shared a holiday like this before and I hope we get a chance to repeat it very soon. Thank you ladies for your company, your assistance with doing a bit of damage to my credit card and for being two of the most beautiful people I have the pleasure of knowing.
Let's go somewhere warm next time though...

Day Three: A Day of Eats and Treats!

Hello to all my new readers! I promise when I get back home that I will be able read and enjoy all your wonderful comments, please don't think that I am ignoring you, I just haven't got access to quality technology this week.
Today we went to St. Kilda for breakfast. Phamish was the spot, Jessica and I discovered it last year whilst holidaying in Victoria and we loved it so much that we returned for breakfast three times in the one week. We decided that Mum's trip to Melbourne would not be complete without enjoying breakfast in this beach esplanade spot. I had delicious oatmeal with caramelised banana that was perfect for starting out this chilly morning.
We then headed down Acland St. for some retail enjoyment, passing by the gorgeous European cake and pastry shops and taking in the sight of the sugary confections displayed for passing customer's delight. I particularly liked the look of the white chocolate and hazelnut flourless cake and the towers of macarons in one shop window.
We caught a tram back to the city after making some purchases and headed to our high tea at the Langham Hotel. The atmosphere inside the hotel was beautiful; chandeliers, marble and sumptuous carpeting. The gluten free high tea was wonderful and Mum and Jess report that the classic high tea was just as lovely. I really enjoyed the almond and chocolate layer cake and the traditional scones with jam and clotted cream.
We then took a slow walk back to the city centre, stopping to marvel at Federation Square (pictures to come, I promise) and the city skyline. After some more coffee to brace ourselves against the cold we wandered through the laneways a little and picked up some bits and pieces for those at home and then made our way back to change for dinner.
Mum, Jess and I met some family friends at the RACV club for dinner, and everything was lovely. I had eggplant and ricotta involtini dressed with a tomato and capsicum puree for my main meal and a chocolate mousse for dessert which was so divine that it somehow all disappeared from my plate very quickly!
Tomorrow we are off to explore the laneways that define Melbourne, and do just a little more damage to our credit cards. No doubt there will be more delectable food tomorrow as well and I'm hoping to squeeze in a quick run in the afternoon, one of my favourite ways to see a city other than my own.

Day Two: King Tut and Italian Delights

Here we are on the evening of our second day in Melbourne!
Today Mum, Jess and I braved the cold and headed up to the Queen Victoria Markets and were rewarded with fantastic coffee and beautiful fruit toast. The food halls are always my favourite part and there were so many delicious cheeses and antipasti (think mascarpone stuffed figs and apricots - yummy!), was a little too early for that though so I made do with some wonderful Greek yoghurt and muesli.
Then we headed to Lygon St., which is the Italian district, lined with restaurants, each offering a bounty of fresh and flavoursome food. I discovered a great spice shop which yielded some amazing flavours of salt and sugar to experiment with when I return to my home kitchen.
We had lunch at a wonderful family run Italian restaurant where we were the willing audience to some talented pizza tossing. The risotto con funghi was amazing too.
Then we headed to the museum and saw the Tutankhamun exhibit which was breathtaking. There is nothing that compares to the feeling of seeing something that truly is timeless, 3500 year old artifacts remind you how brief our time is here and how much we all want to be remembered when we are gone. Art is eternal culture. Looking at the pieces left behind by these people causes me to think about what I would like to leave behind, what would the pieces of my life cause people to think about how I lived, how I loved when I am no longer here?
Dinner was a quiet affair (more chocolate was involved) and tomorow we are off to breakfast at one of my favourite restaurants and to high tea for Mum's belated birthday surprise!

Coming to You Live from Melbourne!

Thank you everyone for all your congratulations and the wonderful comments on my last post.
I really enjoyed the half marathon and now I'm thinking of signing up for another one in October!
This morning my Mum and sister and I woke up early (3 a.m) again, this time to go to the airport and catch a flight to Melbourne.
Talk about a reward for crossing the finish line yesterday.
Today we took it pretty easy and just shopped the day away. Tomorrow we will be engaging in more cultural pursuits; checking out the local markets and seeing the Tutankhamun exhibit at the Melbourne Museum. I am really excited to see this as I am a massive ancient history nerd.
Now off to find some dinner, hopefully it will involve gelati!
